Heavenly S’mores Cookie Sandwiches

You can probably tell by now that I absolutely love anything s’mores flavored. These allergy friendly s’mores cookie sandwiches are delicious, they fit my cravings for sweet treats every time. Graham cracker cookies with marshmallow chocolate filling, decorated with chocolate streaks. There is a perfect balance of chocolate and marshmallow to cookie, these could not be any better!

As I am sitting writing this recipe, I am eating my second one of these today. Beware: they are completely addictive!

Origins

This recipe did not take too many trials to make the perfect cookie sandwich. I have never really given cookie sandwiches a try, so I decided it was time. S’mores flavored things are always delicious, so I decided this would be the perfect flavor to make. I have already been making my amazing s’mores campfire cookies forever, so I decided to use close to the same delicious graham cracker cookie base for this recipe. I made a few trial sandwiches, and voila! The perfect cookie sandwich.

What is a Cookie Sandwich?

A delicious masterpiece. I know, I know, when you think of a sandwich, you probably think of two pieces of sliced bread with some sort of meat and sauce inside. Not fluffy marshmallow and crisp chocolate encased by two soft graham cracker cookies. But be honest, which one sounds better?

Graham Cracker Cookies

These are absolutely amazing. They are the softest cookies ever, and they have real graham cracker crumbs inside and out for maximum graham cracker flavor. 

It is super important that you roll the cookies in graham cracker crumbs because that is one of the things that really gives them a super special appearance, flavor, and texture. Also be very careful not to overtake them, as that can completely ruin the texture.

As I said before, these cookies are very close to the same ones used in my amazing s’mores campfire cookies recipe. I just slightly changed some of the ingredient amounts to make the cookies spread out flatter to achieve the perfect sandwich “bread”.

Final Tips

Similar to most of my other recipes, these are not too hard to make, but I still have some tips that can ensure everything runs smoothly and they are as amazing as possible.

  • Cream the butter and sugars for a full 3 minutes. This will ensure that your cookies have an amazing texture.
  • Spread the right amount of chocolate on each cookie. Not too much, not too little. I put about two teaspoons of melted chocolate on each cookie.
  • Make sure you grease everything that touches the melted marshmallows. Melted marshmallows can be very sticky. This helps to have a much easier clean up process.
  • Do not put too much marshmallow in between the cookies. When set, the marshmallow layer should be about 1/4 inch tall.
  • Do not over-toast the marshmallow. It should be a nice golden brown, like the perfect toasted marshmallow for making traditional s’mores.

Ingredients

  • Graham Cracker Cookies
  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup (1 stick) vegan butter (I use Earth Balance)

  • 1/2 cup white sugar

  • 1 package of graham crackers (8-9 whole crackers, crushed into fine crumbs)

  • 1 fake egg (I use Ener-g egg replacer)

  • 1 tsp vanilla extract

  • Filling
  • 1/2 cup melted non-dairy chocolate (I use Enjoy Life)

  • 1 cup marshmallows

  • 1 Tbsp non-dairy milk (I use Silk soy milk)

  • Decoration (optional)
  • 1/4 cup melted chocolate (optional) (I use Enjoy Life)

Directions

  • Graham Cracker Cookies
  • Preheat oven to 350°F.
  • Mix the flour, baking powder, baking soda, and salt together in a small bowl.
  • In a stand mixer, cream together the butter, sugar, and 1/2 cup graham cracker crumbs for about 3 minutes, or until pale and fluffy. Add in the “egg” and vanilla and mix until incorporated. Add the flour mixture into the butter mixture and mix until just combined.
  • Scoop dough into 2 Tablespoon sized balls and roll in remaining graham cracker crumbs until coated. This should make 8 cookies. Space balls evenly on cookie sheets and press down slightly. bake for 9-11 minutes or until the cookies are set (the edges should feel harder than the center).
  • Filling
  • After cookies have cooled for about ten minutes, turn them over and spread about two tablespoons of chocolate on the bottom each cookie, just enough to make a nice layer on-top of the cookie. Set aside.
  • While the chocolate is setting, grease a medium sized microwave safe bowl, a spatula, and a spoon. Melt the marshmallows in the microwave, checking frequently so that the marshmallows do not overflow. Add the milk and stir with the prepared spatula.
  • Using the prepared spoon, scoop about two spoonfuls of melted marshmallow onto the bottom of four cookies. Place in oven on broil and watch closely until the marshmallow is golden brown, this should take about thirty seconds.
  • Place the remaining four cookies on-top of the marshmallow on the cookies, like you would prepare a sandwich. Make sure the marshmallow does not overflow.
  • Decoration (optional)
  • Place melted chocolate in a small sandwich sized ziplock bag and cut off a small triangle in the corner of the bag.
  • Working quickly, squeeze the chocolate out of the snipped corner, going back and forth across the cookie sandwiches, making whatever design you prefer.
