Amazing Apple Cobbler

I love a good apple cobbler. So, when I got a request to make an allergy-friendly apple cobbler through instagram, I was more then happy to oblige. For those of you who do not know, apple cobbler, or apple crisp, is basically apple pie style apples with a crumb topping. All in all, it is the perfect dessert.

I make this for every Thanksgiving, but it is perfect for any time. My favorite way to serve this is fresh out of the oven and warm with a scoop of vanilla ice cream, but I am no stranger to the fresh out of the fridge for breakfast version as well. No matter how you serve it, in my experience, it has always been a huge hit. I always get requests for my apple cobbler recipe at Thanksgiving from friends and family. One of my favorite things about this recipe is that I did not have to use many substitutes or fancy shenanigans to make it even better then the allergen filled version. It is a really simple recipe. I hope y’all like it as much as I do!

Origins

I have been having apple cobbler for Thanksgiving for about as long as I can remember. It has been a family tradition for a very long time. It has always been one of the highlights of my families Thanksgivings. We did not really have a recipe that we used every year that was amazing, so we would always use a different recipe every year, or sometimes I would just make the recipe up on the spot. I am not saying that those versions of apple cobbler were not good, but if they were on a scale of 1-10, they would be a nine while the recipe I have for you today is more of a 10,000.

I have been wanting to make an apple cobbler recipe to share on Eclipse Baking since I had the idea to create my own website, but when I got a request to make an Apple Cobbler recipe through Instagram, I finally decided to do it. After lots of testing and different variations of this recipe, and I finally nailed it about a week ago. I hope it can become a tradition in your family just like it is in mine!

How to Store Apple Cobbler

You can save this a few ways. You can either freeze it or use the fridge. The only thing you can not do is leave it out on the counter! To freeze it, cover the pan and freeze for up to 3 months. When you want to eat it, thaw at room temperature. For best results with freezing, freeze before baking so that the topping will still be crispy when eaten. When you want to eat it, just bake normally (at 400°F for 45-55 minutes) If you are going to eat it within the next few days, you should store it in the fridge.

One of the things that is important to note about this recipe is that it is definitely best fresh out of the oven. The top is crispy and the apples are warm. If it is refrigerated, then it will still be amazing, but the topping might not be quite as crispy.

Final Tips

This recipe is not too hard to make, so there are not too many things that I have to say. That does not mean I do not have anything though!

  • Do not pack the crumb topping together! It should be very crumby. That is why it is called crumb topping! This is the most important thing for the topping.
  • Do not underbake! This is super important for every recipe, but especially this one. It is much easier to underbake than overbake this one. The apples need to be soft and the topping needs to be crispy to make an amazing apple cobbler.

Ingredients

  • Crumb Topping
  • 1/3 cup melted non-dairy butter (I use Earth Balance)

  • 1 cup all-purpose flour

  • 1/3 cup brown sugar

  • 1 tsp cinnamon

  • Apple Filling
  • 1 tsp cinnamon

  • 3/4 cup brown sugar

  • 3 Tbsp white sugar

  • 8 cups apples, peeled and sliced (about 6 large apples)

  • 1/4 cup all-purpose flour

Directions

  • Preheat the oven to 400°F.
  • In a small bowl, whisk together the crumb topping ingredients without the butter (sugars, cinnamon, and flour). Add the melted butter and mix together. Place aside in the refrigerator.
  • Toss the apples with the cinnamon, brown sugar, white sugar, and flour in a large bowl. Place apples in a 8×11 baking dish.
  • Scatter crumb topping over the apples neatly and evenly, being careful to not pack it at all. Bake in oven for 45-55 minutes or until the apples are soft when poked with a fork and the topping is golden brown and cooked all the way through.
