Mom’s Chocolate Candy Cane Fudge

Since it is the holiday season (as I am writing this it is exactly five days until Christmas 2020), I decided that I needed to share with you all my favorite holiday recipe that we make every year. So far this year, I have already made this fudge three times, to ensure that we have a constant supply.

This recipe was created by my mom when I was in kindergarten. Since 2010 (when I was in Kindergarten), my family has made this fudge every Christmas season. Since it has been in my family for that long, then that should tell you just how amazing it is!

Fudge is one thing that, if I did not have this family recipe, I think I would have a hard time making allergy-friendly. Since it uses so much condensed milk, which I am yet to find a great substitute for, I would try and overcomplicate it and it would take quite a while to make up a great recipe. Luckily for me, my mom saved me from that when she made this recipe. While the ingredients may take a very different turn than the original fudge recipes everywhere, I can promise you that it is still amazing and is about as close as you can get to the dairy version.

This is also pretty much the most easy recipe you will ever find. You simply mix together the ingredients in a pot and pour into a pan. Then you add some crushed candy cane to the top. Definitely worth the effort!

Origins

Like I said before, my mom created this recipe when I was in Kindergarten. She used to come in every month and teach cooking classes to my grade. Everyone always loved everything that she made. If a test group of about 100 Kindergarteners loved this fudge, I can pretty much guarantee you will as well! After all, everyone knows that little kids are the most honest people on the planet.

Every Christmas season since the recipe’s creation, my family and I have enjoyed making this fudge for friends, family, and of course, ourselves. When the holiday season of 2020 rolled around, I knew that I had to post a holiday recipe that was effortless but yet amazing. I present to you, candy cane fudge!

Ingrediants

I know when you look at the ingredients and are making this recipe, they may sound a little odd. I promise you, they are not that odd and it turns out amazing anyways.

It may seem like quite a lot of sugar, but fudge is a delicacy, not a binge-food. Plus, you would be astounded by how much sugar is in the fudge that they sell in the stores! Trust me on this, this fudge will blow your mind!

The dark cocoa powder also gives the fudge a really rich and deep chocolate flavor to pair the sugar. If you do not have dark cocoa powder, you may use regular, or you could try adding a teaspoon of espresso powder to bring out the chocolate flavor even more. I highly recommend the dark cocoa powder though!

Final Tips

This recipe is honestly one of the easiest recipes I have ever wrote, and it is pretty fool-proof. Here are some tips that could help you though.

  • Measure your ingredients correctly. It is really easy to accidentally pack too much-powdered sugar into a measuring cup, so I recommend either getting a scale to weigh the powdered sugar, or just using a spoon to scoop and gently pour the powdered sugar into the measuring cup.
  • Crush the Candy Canes Just Right. Not too much, not too little. The candy canes should no longer be in any giant pieces, but they should not completely be dust either.
  • Sprinkle the candy canes evenly on top of the fudge. This is probably obvious, but make sure that the candy canes are spread out evenly so that each piece has the perfect amount of candy cane.

Ingredients

  • 6 Tbsp non-dairy butter (I use Earth Balance)

  • 1/4 cup non-dairy milk (I use Silk)

  • 3 1/2 cup powdered sugar

  • 1/2 cup dark cocoa powder

  • 1 tsp vanilla extract

  • 3 candy canes (or 6-8 small ones)

Directions

  • Spray an 8×4 inch loaf pan (or a loaf pan of similar dimensions) and set aside.
  • Melt the butter in a sauce-pan on medium heat. Add in the milk. Add the cocoa powder and mix until smooth. Add the vanilla extract and salt. Finally, add the powdered sugar and stir again until smooth and everything is combined.
  • While the mix is on the stove, either place the candy canes in a food processor and process until crushed (but not dust!) or place candy canes in a plastic bag and crush with a wooden spoon.
  • Pour fudge mixture into the prepared pan and sprinkle the crushed candy canes evenly over the top. Place in fridge for 1-2 hours, or until the fudge is set and firm to the touch. Cut into squares.
  • Enjoy!

Notes

  • Store the fudge in the fridge so that it stays firm.
