Amazing S’mores Campfire Cookies

These cookies are so good! They are completely different from any s’mores treat I had ever made. With a graham cracker cookie, toasted marshmallow, and a chocolate “kiss”, they are some of the best cookies I have ever made.

Origins

The idea for this recipe started a couple of years ago. I got a new cookbook for Christmas, and there was a recipe for s’mores cookies in it. I tried out that recipe (with substitutes of course), and while it was pretty good, I knew it could be better. Over the past few years, I have made my version of these countless times for friends and family, and I always get requests for the recipe. Now you can access the amazingness as well!

Dairy Free Chocolate “Kisses”?

Yes! You read that right! Dairy-free chocolate “Kisses”! Because I have been allergic to dairy for so long, and people everywhere eat chocolate “kisses”, I knew that I had to figure out some way to make them safe for everyone. Surprisingly, I was able to figure out how to do this fairly quickly.

Silicone Molds. I had quite the collection for a little while, and now I had one more, a chocolate “Kiss” mold! The one I have is from amazon, and it works perfectly every time. It comes in a three-pack of molds that make 25 kisses. Since this recipe only makes 12 cookies, you only need to get one mold dirty!

These are real lifesavers because you can use them in many, many different recipes. You can also make the “kisses” and then wrap them in a small amount of aluminum foil to recreate the classic Hershey’s Kiss.

A little trick that I love to use for making these is to turn all of the kiss holes inside out before hand washing. This makes it super easy to get all of the chocolate off and not have to attempt to clean inside that tiny space.

How To Make Chocolate “Kisses”

Making chocolate kisses is super simple! Here’s how it works:

  1. Melt 1/2 cup of non-dairy chocolate chips (I like to use Enjoy Life’s Chocolate Chips) in the microwave on low power for 1 1/2 – 2 minutes or on the stove over low heat until melted. Make sure you stir the chocolate frequently to prevent burning!
  2. To make a piping bag out of a plastic bag, place a sandwich or quart-sized plastic bag inside a cup, with on of the corners inside the cup and the top hanging around the cup, making a funnel-like shape. (Basically just get the melted chocolate inside the bag!)
  3. Pour the melted chocolate into your make-shift piping bag. Cut a small part of the tip of the piping bag off. Working quickly, pipe the chocolate into the mold, making sure that the chocolate is down to the very bottom.
  4. Place in the fridge until set, about 20 minutes. Turn the mold upside down over a clean counter. Stretch the mold away from each kiss and press down gently on the sides of the kiss to get it out. Do not pull super hard on it, or else the kiss’s top will break off.

Graham Cracker Cookies

These are absolutely amazing. They are the softest cookies ever, and they have real graham cracker crumbs inside and out for maximum graham cracker flavor.

It is super important that you roll the cookies in graham cracker crumbs because that is one of the things that really gives them a super special appearance, flavor, and texture.

Final Tips

This recipe is a little harder than my other cookie recipes, so make sure you pay attention to these tips!

  • Cream the butter and sugar well. This is super important in any cookie recipe. It makes the cookie super fluffy and delicious.
  • Make sure your graham cracker crumbs are fine enough. It should not be dust-like, but if it is just broken up into a few pieces then it will not coat the cookie properly when rolling.
  • Do not over toast the marshmallow! This is super important. The marshmallow burns much quicker in the oven than it does over a fire.
  • Be gentle when taking your kisses out of the mold. If you are not super gentle, then the tops will snap off.

Ingredients

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 stick vegan butter (I use Earth Balance)

  • 1/2 cup white sugar

  • 1 package of graham crackers (8-9), crushed into fine crumbs

  • 1 fake egg (I use Ener-G Egg Replacer)

  • 1 tsp vanilla extract

  • 1/4 cup chocolate chips (I use Enjoy Life Chocolate Chips)

  • 6 marshmallows (normal size)

  • 12 homemade chocolate “kisses” (directions above)

Directions

  • Preheat oven to 350°F
  • Sift the flour, baking powder, baking soda, and salt together in a small bowl.
  • In a stand mixer, cream together the butter, sugar, and 1/2 cup graham cracker crumbs for about 3 minutes, or until pale and fluffy. Add in the “egg” and vanilla and mix until incorporated. Add the flour mixture into the butter mixture and mix until just combined.
  • Scoop dough into 2 Tablespoon sized balls and roll in remaining graham cracker crumbs until coated. Space balls evenly on cookie sheets and bake for 9-11 minutes or until the cookies are set (the edges should feel harder than the center).
  • Let the cookies sit until cool before continuing. Cut each marshmallow in half horizontally and dip the sticky side in the chocolate chips. Place the marshmallows, chocolate side down, in the center of the cookie. Place in oven, set to broil. Watch the cookies closely, then will be done quickly! Take out once the marshmallows are golden brown. Push a chocolate “kiss” in the center of the cookie.
  • Enjoy!
