This buttercream is THE BEST. I put it on nearly everything, and it always turns out good, no matter what I do. Whipped to perfection, creamy, and absolutely packed with “milk” chocolate flavor, it’s one of my best recipes.

The melted chocolate really makes this special. It adds the explosion of chocolate flavor, and also makes it much more creamy and delicious. The vanilla extract and salt also are part of the grand plan to make the most amazing chocolate flavor, so do not forget those!

Origins

I have been making chocolate buttercream for as long as I can remember, as it is one of my most simple recipes. I used to not even measure anything when I made frosting, I would just dump it all in! Once I realized that measuring is essential, I started to experiment more. Only a few months ago did I finally make this frosting the best it had ever been and created this recipe! Now, here it is, for everyone to enjoy.

Quick Fixes

My favorite thing about this frosting is that it is so easy to alter to meet your taste! The recipe is made to work for either piping or cake building, but if you need to alter it, go ahead! Here are some of the most common problems and how to fix them.

  • Too Stiff? Add more milk, one teaspoon at a time!
  • Too Runny? Add more powdered sugar, one tablespoon at a time.
  • Too Sweet? Salt can work wonders on cutting through the sweetness. Be careful not to add too much!

Final Tips

  • Make sure you let the chocolate cool! If you take your chocolate straight out of the microwave without letting it cool, then it will melt your butter and turn into a sloppy mess.
  • Take your time when mixing. Unlike most of my other recipes, this frosting shines when you mix for a very long time. It makes it unbelievably fluffy and delicious! If you do not mix it well, then it could be grainy and dense instead of fluffy and delicious!

Ingredients

  • 1 cup vegan butter (I highly recommend Earth Balance)

  • 1/2 cup chocolate

  • 1/2 cup cocoa powder

  • 1 tsp salt

  • 1 tsp vanilla extract

  • 4 cups powdered sugar

  • 1/3 cup milk

Directions

  • Cream butter in a stand mixer for a minute. Scrape down the sides and set aside.
  • Melt chocolate in the microwave for 1-2 minutes, or until the chips start to glimmer, and when stirred it becomes a smooth mixture. Do not burn it! Stir chocolate for 30 seconds or so, just to cool it down a little bit. Quickly pour chocolate onto the butter and start mixing again at medium-high speed until the butter is super fluffy.
  • Sift in the cocoa powder and salt and mix again. Add in the vanilla. Next, sift in the powdered sugar and mix until combined. Add in the milk, adding more if needed. Mix on medium-high for another three minutes or until it has reached the desired consistency.
  • Pipe or spread onto cupcakes or cake.
  • Enjoy!
